I’ve never much been one for pot roast–although, you’d never know it if you just witnessed me eat my dinner…

Since i’ve never really enjoyed pot roast in the past,  why would I want to make it? Well, for starters, I had exhausted my trusted crock pot recipes and wanted to try something new. With pot roast being a crock pot classic, I figured I ought to give it a try. It also didn’t hurt things that the meat was on sale and I got a free bag of potatoes with purchase.

Let me just say, I probably looked barbaric eating my meal tonight. It was THAT good. With that said, I felt as it was my duty to share with you how to make this delicious meal.

I loosely followed this recipe with a few minor modifications. Here’s what I changed…

1.) For starters, I cut the recipe in half, as I only needed to feed two people. And yes, I realize half of this recipe still serves 6 people! Haven’t you ever heard of leftovers 🙂

2.) Instead of using a half a cup of water, I used a half a cup of red wine, plus two tablespoons of water. I used a Cabernet, but I am sure any dry red wine will work. Although, the cab added a little bit of sweetness to the sauce that in my opinion put it over the top.

3.) Before placing the meat in the crock pot, I browned it on all sides  in a little bit of butter. I also seasoned it up with some salt, pepper, and rosemary. Yum!

4.) Once I put the meat in the crock pot, I added a little bit of minced garlic, sliced onion, and some baby carrots.

8 hours later I officially became a pot roast fan. The meat was so tender that I couldn’t even take it out of the crock pot without it falling apart. I served it up with some garlic mashed potatoes and was licking my plate clean after my last bite. Okay, I wasn’t literally licking my plate, but I was tempted. Although, I must admit that there was quite a bit of finger licking tonight as I finished off the leftovers. I sopped up the left over gravy, which was even more delectable tonight, with a half a loaf  slice of our favorite french bread, and finished off every last bite. Now i’m even contemplating sneaking a few bites off Jacob’s plate before he makes it home from work … 😉
